Reviews
Copyright 1991 Reed Business Information, Inc.
An invaluable reference, this encyclopedic work includes more than 1000 entries on ingredients, cooking terms, and techniques. There are excellent charts on, for example, how to grill any type of food, and illustrated guides to Oriental ingredients, different cuts of meat, and carving a turkey, among other topics; boxes on "kitchen math" are a particularly useful feature. Some 200 recipes are included, but they are not the main focus here. With 650 photographs, a readily accessible format, and wide-ranging coverage, this should become an indispensable resource for cooks at all levels. Highly recommended.
