There are over two thousand recipes, which, according to the introduction, "have been simplified without producing confusion, and in every case is given the correct weight and measure, the exact time ofr preparing each dish, the number of persons the recipe is to provide for, and. the name of the dishes in French". The recipes are French-based with ingredients in British measure. A very good collection of recipes dating from the 1930s with a chapter on game, as well as on curry; the meat pies and recipes for puddings seem quite good. There are 44 recipes for eggs and omelets alone. Here is the chef's method for killing lobster: :run a skewer or sharp knife into the spinal cord at the joint between the body and the tail shells.or tie the claws together and plunge it head first into a pan of absolutely boiling water."
