Schwartz, a California chef, offers dozens of salads of all sorts, from French, American, and Italian classics to unusual creations inspired by a variety of cuisines. Christopher Idone's Salad Days ( LJ 6/15/89) is similar in style, but somewhat more extravagant, and Schwartz's book has twice as many recipes. Summer's coming, and there are some good ideas here. For most collections.
