It is Thanksgiving week, 2011. I have lived fifteen years longer than I was first diagnosed to live in January of 1997. In that time I have met thirteen new grandchildren and learned to do things I always wanted to do, like oil painting, playing a saxophone, cruising around in my own bass boat and generally enjoying life. I have reversed my heart disease. From a close-encounter with a transplant to my activities today is rather amazing. I credit four things for this.
1. Consuming no salt. Absolutely no salt. Sodium levels at or below 500 mg per day. 2. Heart medications including Carvidilol, Cozaar and digitalis. 3. Exercise daily.4. Do something new every day or at least try to learn something new. In other words, keep the brain active as well as the body.

In 1997, after suffering a collapse while rowing, sixty-three-year-old Donald Gaz- zaniga was diagnosed with congestive heart failure. Unlike with other heart ailments, bypass surgery is not a treatment for this; and although there are medications, congestive heart failure patients must look to a heart trans- plant for relief, assuming they survive until their name reaches the top of the transplant waiting list.
Gazzaniga was placed on the list at Stan- ford University Hospital Medical Center. He was told to watch his diet, which he had always tried to do, and especially to consistently eat foods that are as low as possible in sodium con- tent. It is surprising how many people do believe that a low-sodium diet means that you simply ban the saltshaker from your kitchen and table. Actually, a very large percentage of all the foods we eat contain varying amounts of sodium-and many contain a lot. Not only is it naturally present in many foods, but more is often added during the preparation of commercially packaged foods as well.
Gazzaniga, who had always been interest- ed in food and cooking, now had an incentive to develop special recipes. The immediate result is the recipes in this book. They are as much as 70 percent lower in sodium than those of other low-sodium cookbooks. Doctors use the figures 2,000 mg. or 2,500 mg. of sodium per day as a goal for their heart disease and hypertensive patients because they don't believe it's possible to concoct a diet lower in sodium than that. But these recipes provide delicious, easy-to-make dishes and menus with as little as 500 mg. of sodium per day. What will delight those-and their families-whogo to them for health is that by some mag-ic Gazzaniga has been able to present the cook with finished dishes that are varied, easy to make, and as delicious as any "regular" dishes.
The second result is even more impressive: After following the recipes in this book, Gaz- zaniga discovered his medical tests showed an improvement that his doctor calls "amazing"- and he has been taken off the transplant list!
