It begins with a brief history of the origin and spread of winemaking, followed by profiles of the principal types of wines and spirits, their methods of production and their uses. There are also suggestions for suitable foods to accompany the various wines and the book concludes with a look at the trade itself and its products as presented to the consumer. Additions to this edition include a chapter on cigars and changes to the chapters on light and sparkling wines, which include details for non-EEC countries. It is suitable for those wishing to pursue a career in the licensed trade and is the basic text for the Wine and Spirit Education Trust's Ordinary Certificate course; but it should also benefit first and second year students in wine service, catering technology and catering and hotelkeeping.
