Ma Cuisine, the Los Angeles cooking school, has an impressive staff of "Hot Young Chefs," and some of their best recipes are gathered here. The book is organized by courses of a meal rather than as a cooking course, but each recipe is accompanied by expansive notes on techniques and preparation. Despite the inventiveness apparent throughout, most of the recipes are well based in classic cuisine, and Osso Buco and Borscht turn up among such dishes as Thai Pizza and Green Chile Souffle.
