A bit of sunning to spine with some edge and corner wear (ding to upper right corner), some foxing to reverse; light wear, mild toning to edges; very good to very good plus in a very good jacket with some light aging and wear along with a small chip at top of spine on back. Classic guide to restaurant management, on the grand scale, by this European chef who came to the US in the 1950's. This book was adopted as a text by a number of colleges and culinary institutions. There is a laid-in single-fold insert from the publisher that lists the schools that have adopted this work along with other information about the book and author. This copy is signed on the front free endpaper by the author with the inscription "To: Dick Wray / with kindest regards".
