His Aspen, Colorado restaurant, Renaissance, is widely acknowledged to be one of the finest in America for its cuisine, extensive wine list, and high standard of service. Charles counts as his culinary mentors such brilliant chefs as Daniel Boulud, Alain Sailhac, and Barry Wine. He has also created a line of all-natural marinades under the St. Dalfour label, manufactured in and imported from France.
Aimee Dale, an actress and model, has lived in Malibu, California, and Southern Florida. She is a champion horsewoman and is currently pursuing a career in fine art. Aimee is the driving force behind The Chefs' Guide, and has spent countless hours gathering and entering the information contained in this book.
