Crushed fruits readily undergo natural fermentation by indigenous yeasts, and moist seeds germinate and develop amylases that produce fermentable sugars. Honey, the first con­ centrated sweet known to humans, also spontaneously ferments to alcohol if it is by chance diluted with rainwater.
