La turbulence de l'atmosphère est une turbulence développée sur une très grande gamme d'échelle de temps et d'espace. Sur cette gamme, une cascade d'énergie invariante d'échelle se développe des grandes échelles vers les plus petites. Depuis les années 1960, de nombreux modèles de cascade ont été imaginés. Si ces modèles ont des points communs, ils n'en présentent pas moins des différences fondamentales. L'analyse empirique permet alors de mieux apprécier la pertinence ou non de certains points de vue théoriques. Nous nous plac?ons ici dans le cadre d'une famille de cascades multiplicatives continues, définie comme l'attracteur universel des modèles stochastiques multiplicatifs continus. Ces cascades génèrent des multifractals qui ne dépendent que d'un nombre très réduit de paramètres statistiques (trois paramètres) ; ce sont les multifractals universels. Nous vérifions l'hypothèse d'universalité et nous déterminons expérimentalement ces trois paramètres fondamentaux pour la turbulence développée: nous analysons des données de vent de soufflerie, puis plusieurs bases de données de vent atmosphérique. Nous montrons que ces paramètres ne varient pas de fac?on significative pour la turbulence développée, et sont très stables pour les données atmosphériques. Ceci semble indiquer que ces trois paramètres ne dépendent que de propriétés très générales et fondamentales de la turbulence. Nous analysons ensuite les fichiers pour des échantillonnages croissants de fac?on a? quantifier l'influence de l'échantillonnage sur les statistiques des valeurs extre?mes de la turbulence. Nous estimons un ordre expérimental de divergence des moments pour le flux d'énergie turbulente, théoriquement prévu dans le cadre des cascades canoniques. Cette divergence des moments correspond a? une transition de phase multifractale de premier ordre, et quantifie le comportement extre?me de la turbulence développée. Ces résultats permettent de caractériser toutes les statistiques de la turbulence ; aussi bien les fluctuations moyennes que les extre?mes.
