Includes recipes arranged by fish: fresh-water, salt-water and shellfish, as well as turtle recipes, frog recipes, and snail recipes. Simone Prunier, known as Madam Prunier, was a French restaurateur and food writer who established a well-known French restaurant in London. La Maison Prunier, a Paris restaurant founded by her grandfather Alfred Prunier which was later passed down to her father and then herself, became famous for the fresh fish and shellfish that was delivered daily by train from the sea, a novelty at the time. Madame Prunier later went on to open the Prunier St James's restaurant in London. Selected, translated and edited, with an introduction and notes by Ambrose Heath, an English journalist and food writer. In the original full cloth binding.
