Harina, azúcar, sal, leche, mantequilla y levadura componen una masa que en las manos de Bachour se convierten en croissants clásicos y bicolor, rellenos de mascarpone, de pecan, de mango-pasión? y en diferentes acabados? Pain au Chocolat, clásico y bicolor, con diferentes rellenos; Hazelnut pain aux raisins; ?Rocher? croissant roll; Apple braid croissant; Flan croissant? en total 13 elaboraciones con la misma masa. El buffet se completa con otra de esas masas emblemáticas, como el brioche, en tres formatos diferentes, sugar brioche, mango Tropezienne tart y chocolate brioche. Y por último, una masa también de esta familia, que conocemos como babá y que es tan excepcional que no puede faltar en un buffet como este. Dos: Entremets & Petits Gâteaux Es uno de los platos fuertes de Antonio Bachour. En formato individual y familiar, o lo que es lo mismo, entremets y petits gâteaux, el chef demuestra toda su creatividad y su conocimiento en las distintas labores pasteleras, desde los bizcochos, crujientes, cremas, mousses, gelatinas, glaseados hasta las decoraciones? Bachour propone combinaciones tan interesantes como la de su Napolitan, brownie de chocolate con una crema de vainilla y una panna cotta de fresa, todo ello bañado en un glaseado crujiente de fresa y rematado con una ganache montada de chocolate blanco; un curioso París-Brest de pistacho; un Capuccinno de chocolate, café y vainilla en formato entremet; o un Mont Blanc de castaña, vainilla y mascarpone. Y así hasta un total de 13 creaciones inéditas con el sello inconfundible del chef. Tres: Fruits & Vegetables La pastelería de Antonio Bachour no es vegana ni plant based, pero sí se apoya en todo tipo de vegetales para crear tartas, pasteles y postres únicos. Frutas y verduras con las que ya jugaba durante su etapa profesional en hoteles y restaurantes. Este buffet es pura naturaleza, con los colores propios de las frutas cítricas, rojas, verdes, tropicales y continentales, y vegetales frescos y carnosos como la calabaza, la berenjena o la remolacha, entre otros.
