Im europäischen Teil Russlands fand in der Zeit des Umbruchs zwischen Monarchie und Diktatur des Proletariats eine "kulinarische Revolution" statt, welche eine tiefgreifende Veränderung der Essgewohnheiten der russischen Gesellschaft zur Folge hatte. Während der Adel eine europäisch beeinflusste und auf importierte Produkte basierende, schmackhafte Küche genoss, bestand die tägliche Mahlzeit der Mehrheitsbevà lkerung aus Kohlsuppe, Brei und Kvas. Diese Forschungsarbeit befasst sich mit der Frage, mit welchen MaÃnahmen die Sowjetische Politik die Esskultur Russlands zwischen 1918 und 1940 verändert hat und zu welchen Ergebnissen diese Veränderung geführt hat. In dieser Monografie soll die Ernährung der unterschiedlichen sozialen Klassen, insbesondere jene der Bauern und des Adelsstandes vor der Revolution, und des Proletariats und der Nomentklatura nach der Oktoberrevolution untersucht werden. Damit sollen insbesondere die wesentlichen Unterschiede zwischen diesen Klassen aufgezeigt und ein Vergleich durchgeführt werden. Der Verfasser der Studie kann aufzeigen, dass durch die sozialistische Ideologie eine Popularisierung und Sowjetisierung der russischen Küche stattfand und dadurch die Ernährungssituation der groÃen Mehrheit der RussInnen deutlich verbessert wurde. Des Weiteren wurde bewiesen, dass die erzwungene Industrialisierung des Landes zu einer innovativen Lebensmittelproduktion führte, welche das tägliche Angebot der Speisen vereinfachte und standardisierte und die Art des Kochens beschleunigte.
