The current study involves the use of gamma radiation to enhance the shelf life of cucumber. For this purpose, cucumber sample was subjected to Co-60 gamma irradiation at different doses 1, 1.5 and 2 kGy. Microbial and sensory analysis was carried out for all the treatments. El presente estudio se centra en el uso de la radiación gamma para prolongar la vida útil del pepino. Para ello, se sometió una muestra de pepino a irradiación gamma con Co-60 en diferentes dosis: 1, 1,5 y 2 kGy. Se llevó a cabo un análisis microbiano y sensorial de todos los tratamientos.
