McCay, professor of Animal Nutrition at Cornell University, Ithaca, NY, began a series of studies to learn the effect of nutrition on life span. His experiments showed that by curtailing calories but providing abundant minerals, vitamins, and protein he could retard the onset of old-age. When asked to help in improving the diet in New York State's mental hospitals, he chose bread as the food to correct since the patients tended to eat more of it than most people. This booklet offers a recipe making 200-loaves of Cornell (Triple Rich) Bread used by the bakers of the Dept of Mental Hygiene, NY State, plus a 23-loaf recipe for the commercial baker as well as smaller recipes for the home baker including sprouted wheat breads, sour rye, potato sesame rolls, sticky rolls and waffles. Illustrated with black/white photos throughout and with many excerpts from Clive McCay's talks and writings about bread and its special ingredients.
