Le tacche presentano ovvie ingialliture, ma altrimenti ottimo es. È questa la VI edizione di opera ricercata con 379 ricette ordinate per argomenti. La parte finale è dedicata all'economia domestica e alla "variazione" rotazione quotidiana dei piatti. L'editore nella presentazione riporta l'articolo di Paolo Mantegazza inserito nell'Almanacco igienico, Anno I in cui si spiegano i motivi per cui l'opera apparve anonima. Dubini era un prestigioso medico milanese che avesse compilato un libro di cucina i lettori avrebbero considerato il fatto una mancanza di dignità e serietà. L'autore (1813 - 1902) descrisse per primo (1846) il quadro clinico della correa elettrica, chiamata "spasmo Dubini" e poi la scoperta nel tubo digerente dell'anchylostoma duodenale (causa dell'anemia dei minatori). Interessante e fortunato manuale di cucina, anonimo, ma dovuto alla penna di Angelo Dubini; l'edizione originale uscì nel 1858 ed è da notare che il libro figurava nella biblioteca di Pellegrino Artusi, che ad esso attinse per talune ricette.
