Allo stesso tempo negli Stati Uniti d'America iniziò un'epoca fondamentale per il mondo del bar e cioè il "Proibizionismo"; un lasso di tempo durato ben 13 anni in cui venne sancito il bando sulla fabbricazione, vendita, importazione e trasporto di alcool, di fatto causando per molti bartenders un cambio di paese per continuare a svolgere la propria professione. Tra le mete più ambite, la capitale francese: Parigi. Cocktail de Paris verrà pubblicato nel 1929 e racchiuderà al suo interno circa 150 ricette di bevande miscelate; non solo cocktails creati da amanti dell'arte ma anche da artisti professionisti che godevano in quegli anni di una grande reputazione ed un esempio rappresentativo è il nome di Frank Meier, patron del bar del Ritz Hotel. Curiosamente non un testo scritto da un bartender per dei bartenders, bensì un manuale pubblicato da un artista dedito allo spettacolo teatrale, alla musica come anche all'illustrazione: lui è il francese Georges Gabriel Thenon (1884 - 1941), spesso conosciuto con il pseudonimo di "Rip": si tratta di un nome d'arte preso in prestito dalle iniziali dalle parole che costituiscono la formula "Rire, Ironie, Plaisanterie", la cui traduzione non è altro che "Ridere, Ironia, Scherzo".
