Il fait ses "premières armes" chef Fernand Point, Lucien Ogier et Christian Bourillot. A 32 ans, il devient un M.O.F. et président des "Toques Blanches". Première étoile au guide Michelin en 1994. Il s'installe dans "son pays lyonnais" après de très nombreuses expériences à travers le monde. Il est devenu le porte-parole de la cuisine e Lyon. Ce livre est un prolongement de ses ambitions pour la cuisine du "terroir" lyonnais. Pas courant. Très bon état; mouillure ancienne sur la page de pré-titre mais sans toucher le texte !
