Many classic recipes within including ragouts, ribs, sausages, toasted bread and ham and eggs, turee…ns, fricassee, chicken with wine sauce, glazing, soups, roasts, fish, pastries (puff, almond, etc), pies, tourtes, cakes, ice cream, creams, "baignets" (beignets), among many others. This the only edition under this title, in 1769 the second edition was retitled The Professed Cook. In the "apology", the translator tells us that this work was drawn from four "small volumes" (known to be works of Menon), although the title page refers to only one. Provenance - The Sontheimer Foundation bookplate on the pastedown; Carl G. Sontheimer was an American inventor and engineer best known for creating the Cuisinart. Bibliographic Details - English Short Title Catalogue number N14583. Somewhat scarce, only eight copies listed. On that note, the 1913 All English Cookery Books notes, "no copy has been seen of late years" (page 95). At the time of listing this book for sale, no other copies found on the market (using Vialibri). Quelques légères brunissures et piqûres en marge.Exemplaire incomplet de ses gravures dépliantes, toutes lacunaires en partie.Édition originale de cet ouvrage traditionnellement attribué à Joseph Menon.Malgré l'abondance de son oeuvre culinaire, notamment pour sa Cuisine bourgeoise, l'un des livres de cuisine français les plus diffusés du XVIIIe siècle, qui connut un très grand nombre d'éditions, de traductions et de contrefaçons, la vie de Joseph Menon (1700-1771) demeure mal connue. Il aurait été officier de bouche de la reine Marie Leszczyńska avant d'entreprendre, vers 1738, une carrière d'auteur avec la publication du Nouveau traité de la cuisine.Figure majeure de la gastronomie des Lumières, Menon incarne la " nouvelle cuisine " qu'il théorise lui-même, fondée sur l'étendue des savoirs autant que sur la qualité des recettes, notamment en pâtisserie, parmi les plus remarquables de son temps.Le premier tome s'ouvre sur une suite de quatre gravures représentant des tables dressées de cinq à vingt-cinq plats, suivies d'une série de menus. Viennent ensuite des chapitres consacrés à la découpe des viandes, aux jus, coulis, ragoûts, sauces, roux et farces, puis aux différentes préparations de viandes, avant de s'achever sur les confitures et les desserts.Le second tome est consacré aux poissons, aux pâtisseries, aux oeufs et aux légumes. Il est suivi du Petit traité abrégé sur la manière de faire les confitures liquides et autres desserts de toute espèce, qui réunit plus de quarante recettes de confitures, desserts, liqueurs et " eaux rafraîchissantes ".Les deux volumes sont ornés de plusieurs gravures sur bois dans le texte ainsi que de frises, lettrines et culs-de-lampe gravés qui ponctuent les débuts et les fins de chapitres.Provenance : ex-libris de Brossier de la CharpagneVicaire, 592 - Cat.
