Il mercato, da intendere come momento nel quale si unificavano allevamento, produzioni, contrattazioni, commercio e vendite di prodotti animali o della lavorazione della terra, viene seguito nelle sue trasformazioni tramite una documentazione inedita tratta principalmente dagli archivi comunali. La festa è indagata nei passaggi che hanno portato dalla Toscana della fine del granducato lorenese, nella quale i festeggiamenti erano principalmente di carattere religioso e folclorico, al periodo liberale, quando si svilupparono rituali pubblici laici e civili e presero forza tendenze anticlericali, quindi al periodo fascista, durante il quale ogni attività doveva essere in linea con lo spirito del regime mussoliniano, per finire al quinquennio successivo alla conclusione della seconda guerra mondiale, quando si delineò la fine del carattere eminentemente agricolo della nazione.
