A 25 anni dalla sua prima apparizione esce una nuova edizione di Ratafià e ghirighio. Queste due parole, apparentemente così oscure, indicano l'alfa e l'omega della cucina pratese: il ratafià, bevanda di dame e cavalieri del Settecento modestamente alcolica e molto fruttata, e il ghirighìo, termine che ricorda formule di maghi e stregoni e invece non è altro che l'indimenticabile castagnaccio. Fra le prelibatezze descritte si citano anche i berlingozzi, gli zuccherini di Vernio, il cinghiale alla montepianina, la mortadella di Prato e i famosi sedani ripieni. Il libro di Vestri e Mannucci ha però anche il merito di rompere una prolungata lacuna nella memoria, riproponendo non solo l'idea del cibo, ma anche gli usi, i costumi e le tradizioni di una città unica nel suo genere.
