Leur assaisonnement était fait à base de sel, poivre, vinaigre et huile d'olive, condiment auquel l'auteur consacre un long chapitre de vingt-sept pages. L'ouvrage énumère ensuite une cinquantaine d'aliments végétaux avec leur préparation en salade. Les derniers chapitres discutent de la place de la salade dans un repas, de sa relation culinaire et médicale avec les autres plats et avec le vin. Salvatore Massonio, né dans la ville d'Aquila, dans le centre de l'Italie, était médecin, poète et historien. Massonio suggerisce ricette classiche e di sua invenzione fornendo utili consigli sul miglior modo di servirle. Nell'utilizzo dei vari ingredienti e condimenti sono inclusi tra gli altri, olio d'oliva, aceto, sale, pepe, limone, aglio, cipolla, basilico, capperi, tartufo, finocchio, rucola, lattuga, valeriana, asparagi, fave, piselli, fagioli, frutta, fiori di rosmarino. Nella descrizione degli ingredienti l'autore riferisce scrupolosamente le fonti delle sue scoperte, includendo tra gli innumerevoli autori citati Plinio, Plutarco, Cicerone, Aristotele, Avicenna, Mercuriale, Ippocrate. Salvatore Massonio nasce a l'Aquila nel 1554, medico e letterato, morì a Napoli nel 1624, senza riuscire a vedere l'ultima delle sue opere pubblicata, fu autore di un'opera sulla sua città natale, 2 di carattere religioso e di un'importante monografia dedicata all'uso dei bagni nell'antichità. Il Lastri nella sua Biblioteca Georgica-Firenze, 1787-descrive Massonio come "indagatore di cose nuove, indicò gli usi di alcune erbe meno note, definì il loro sapore e rammentò alcune particolarità di esse". Salvatore Massonio, born in Aquila, was a doctor, poet, and historian, and published a historical work on his home-town, two religious books, and a book on baths and bathing. In this utterly revolutionary book, well ahead of its time he covers almost every aspect of salad making, salad dressings -using the normal basics of vinegar, olive oil and salt but also the additions of fruit juices, fermented fish sauces, wine, pepper, orange and garlic. As a doctor he advocated the health benefits of salad and also in this book, the age old discussion of when during a meal the salad should be served is covered.
