From the Foreword: "The idea for this cook book was born as I worked with two seniors in the Department of Home Economics, Kabul University, as they prepared their senior monographs. Monissa Abassi and Shakera Younossi, both excellent and experienced cooks, chose to do research papers on Afghan cookery, and as part of their reports, to standardize measurements and methods so that others could follow their directions. A good bit of their work was done in my own kitchen, and as their skill increased so did my interest in Afghan food, an interest that I knew was shared by many other westerners.".
