André Pellicot (1799-1880), agronome et président du Comice agricole de Toulon, y dresse une monographie commentée de 50 cépages provençaux : Pécoui-Touar, Bouteillan, Brun-Fourca, Picpoule, Persaigne, Furmint, etc. Il reconnaît d ailleurs s être « longuement étendu sur les cépages » dans son avis préliminaire. Pellicot signale aussi des pratiques qu il estime préjudiciables à l essor du vignoble provençal : vigne complantée, taille longue, vinification mal conduite autant de conséquences malheureuses d un conflit entre l ancienne viticulture paysanne et les principes modernes de l ampélographie française.
