Le ultime 2 parti, suddivise in 45 capitoli, vennero appunto pubblicate postume da Plumerey sulla base degli appunti ms. del Carême (cfr. Bitting, p. 374). Il parigino Antonin Careme (1784 - 1833) fu un celebrato cuoco e scrittore. A lui si deve una grande attività di semplificazione e codifica dello stile di cucina noto come haute cuisine, la componente più elaborata della cucina francese. La prima posizione di prestigio di Careme fu quella di chef de cuisine per il diplomatico francese Talleyrand quindi, recatosi a Londra, fu chef per il principe reggente (in seguito Giorgio IV). Ritornato sul continente lavorò per lo Zar Alessandro I a S. Pietroburgo, prima di tornare a Parigi dove terminò la sua carriera presso il banchiere James de Rothschild, facendo della sua tavola la prima della capitale. Francese.
