Saddles of mutton and venison, suckling pig, and game birds are treated fully, and there are instructions for the larding and heeling of large game, and arranging of small fish. Illustrations are drawn from exact models. Regional cuts are also addressed, which is an interesting historical perspective. The dust jacket edges are worn, and the former owners name and date (1942) is written inside the cover, otherwise a handsome clean copy.
