Covered are topics starting with the basics procedures for all forms of carving, this is then followed by detailed and illustrated explanations for carving various roasts and dishes including beef, lamb and veal, steaks, ham, tongue, turkey, chicken and duck. Saddles of mutton and venison, suckling pig, and game birds are treated fully, and there are instructions for the larding and heeling of large game, and arranging of small fish. Illustrations are drawn from exact models. Regional cuts are also addressed, which is an interesting historical perspective. The dust jacket edges are worn, and the former owners name and date (1942) is written inside the cover, otherwise a handsome clean copy. Laid in are two pages from a 1962 Calendar from West Coast Propeller, Burbank CA., with 2 articles on Venison and Duck. Also laid in are 2 articles from Parade, December, 1950 "What is a Boy? What is a Girl?" All with worn edges and tone.
