L'opinion avait en effet bien raison d'avoir peur de son alimentation, mais elle se trompait complètement de cible. Ce ne sont pas les intoxications ou les infections alimentaires qui représentent un danger de santé publique. Tout d'abor parce que les producteurs dans leur ensemble désirent fournir les produits les meilleurs et les plus sains. Ils dépensent beaucoup d'énergie, et de savoir pour cela. Ensuite par ce que les contrôles sont nombreux, systématiques et sévères, et qu'en conséquence les toxi-infections et la mortalité d'origine alimentaire sont rares, en comparaison d'un risque majeur et pourtant habituellement méconnu : le déséquilibre alimentaire. En surchargeant notre alimentation en quantité et en qualité, (trop de sucres, trop de graisses saturées, pas assez de poisson, de volaille, de légumes et de fruits frais) on a entraîné une recrudescence considérable des maladies cardiovasculaires, de l'obésité et du diabète. Enfin on a oublié un constituant essentiel d'une alimentation équilibrée, la boisson et parmi toutes les boissons, le vin. Le vin, merveilleux produit de la terre et du climat, fruit d'une sélection et d'un travail millénaire de nos vignerons et de nos viticulteurs. Le vin, "la plus hygiénique de nos boissons", disait Pasteur, qui en avait étudié et percé à jour tous les secrets de sa réalisation.
