In un manoscritto conservato alla Biblioteca Nazionale di Napoli è presente un curioso ricettario meridionale, "Apparecchi diversi da mangiare", redatto nel 1524 e costituito da 86 ricette. Il volume presenta una nuova edizione critica del testo, accompagnata da un'introduzione che offre informazioni su localizzazione, lingua e rapporti con i ricettari, coevi o di poco precedenti, riconducibili alla Napoli aragonese di fine Quattrocento e all'area catalana. L'interesse di Apparecchi diversi risiede soprattutto nel lessico legato al cibo, documentato nel glossario selettivo che chiude il volume. Nel testo sono presenti molti gastronimi della cucina meridionale, in particolare napoletana o campana, come picza, ceppola ('zeppola'), provola, susamelli, casocavallo, strangolaprievete e così via, molti dei quali registrano una delle prime occorrenze proprio in questo ricettario; inoltre, come negli altri ricettari del tempo, anche in Apparecchi diversi coesistono lessemi di varia provenienza: germanismi, come fiadone o guanti; francesismi, come la salsa dodina; arabismi, dal coscossone ('cuscus') alle insolite almogiavole ('frittelle con ricotta'); iberismi e catalanismi, tra i quali (salsa) burella ('di colore scuro'), carabaczata ('minestra a base di zucca'), mirastro ('pietanza a base di pollo o piccione').
