De l'alcool. La Distillation a pour but la séparation de l'alcool des matières étrangères qui le souillent. Les Distilleries sont les établissements dans lesquels s'effectue ce travail, en même temps qu'on y procède aux opéra tions diverses de la fabrication des liquides alcooliques.

L'alcool est un liquide incolore, très-fluide, dont l'odeur rappelle celle de la pomme de minette, et la saveur est brûlante. Sa formule chimique est C' H8 0' sa densité à sa tension de vapeur de à 20 degrés, sa chaleur spécifique a 20 degrés est Il entre en ébullition à 78 degrés et absorbe par gramme 2l4 calories pour se réduire en vapeur. 11 brûle avec une flamme jaunâtre. L équivalent d'alcool, ou 46 gram., dégage en brûlant calo ries (berthelot). L'alcool se mêle à l'eau en toutes proportions. On nomme alcool absolu l'alcool dénué de toute trace d'eau et dont la composition répond à la formule chimique. On n'obtient l'alcool à cet état qu'à la suite d'opérations de laboratoire délicates et non industrielles; dans le commerce, on ne le connaît qu'en mélange avec l'eau en proportions très-variables, sur lesquelles nous allons revenir. L'alcool absolu est très - avide d'eau qu'il emprunte à tous les corps avec lesquels il est en contact tel que l'air et les matières organiques, aussi est - il très - difficile de conserver l'alcool à un grand degré de pureté aqueuse. Lors qu'on mélange de l'alcool et de l'eau, le liquide que l'on obtient aprés agitation occupe un volume moindre que la somme des deux volumes liquides primitifs.
