This book introduces a new method for grading tomatoes objectively for color and defects, making payments for loads of tomatoes more equitable for both processors and growers. The author, a food technologist with the Agricultural Marketing Service of the US Department of Agriculture, conducted research that sought to address the limitations of the previous tomato grading system. The book provides a detailed description of the research methods, techniques, and statistical analysis used to evaluate the new tomato grading system. This method combines objective color measurement by use of photoelectric instruments, and subjective estimation of defects. In addition to summarizing the research, the book also discusses the historical context of tomato grading, explores the role of sampling in grading accuracy, and suggests how the new grading method could impact tomato juice manufacturers and producers of other blended products.
