Excerpt from Souvenir of the Illinois Dairy Exhibit, World's Columbian Exposition, 1893
Naturally, dairying as a business was first carried on in the northern part of the State. This came from the fact that the primitive methods of making butter required certain climatic conditions which were found in the northern part of the State. Although these con ditions were essential a generation ago, present methods make it possible to make the finest grade of butter in any county in the State.
