Borio dal 4 gennaio al 21 giugno 1853 presso il R. Istituto Tecnico di Torino, dedicata al marchese Emilio di Sambuy; in esse si spazia dalla botanica agraria alla chimica organica alle tecniche agricole più evolute, con particolare attenzione alle colture foraggere e agli aspetti legati agli utilizzi alimentari delle diverse colture. Sia nella introduzione, sia nel contesto nei vari capitoli, il Borio presta particolare attenzione all'importanza dell'economia agraria, a suo parere ingiustamente negletta: depreca così "lo storno purtroppo frequente dei capitali dalla terra; e l'indifferenza dei capitalisti per l'agricoltura, e la diffidenza dei banchieri verso il credito agrario". Molta attenzione è dedicata anche alle condizioni della manodopera impiegata in agricoltura, ai salari e ai fabbisogni alimentari, con paralleli con altre nazioni europee. Gli indirizzi proposti per migliorare l'agricoltura subalpina vengono sintetizzati nella formula "Libertà e Scienza - Credito ed Associazioni", con un'impostazione di tipo cavouriano che aveva trovato corpo in quegli anni nell'Associazione Agraria Subalpina.
