Die Milchproduktion hat sich in den vergangenen Ja…hren stetig und positiv entwickelt. Die Milchleistung je Kuh liegt heute bei 4 200 kg, die Milcherzeugung je Einwohner bei 525 kg im Jahr. Milchverarbeitung und Handel zeigen demgegenüber einen Entwicklungsrückstand, der u.a. dazu führt, daß bei einem allgemein hohen Verbrauchsniveau die Nachfrage nach bestimmten Milchprodukten nicht gedeckt werden kann. Die DDR führt daher Trinkmilch und Sauermilchquark aus und importiert hochwertige Milchverarbeitungsprodukte. Die Studie, die im Auftrag des Bundesministers für Ernährung, Landwirtschaft und Forsten erarbeitet wurde, untersucht Entwicklung und Stand von Milcherzeugung, Milchverarbeitung und Milchvermarktung. Sie basiert auf Statistiken und Fachliteratur aus der DDR und soll eine bisher bestehende Informationslücke schließen helfen; auf Vergleiche mit der Milchwirtschaft der Bundesrepublik Deutschland oder anderer Länder wurde bewußt verzichtet.
